A Few Recipes!!

I found these recipes on FamilyFun.com, and I made them for our little Halloween Dinner last night.



1: Pumpkin Ice-Cream Pie

Crust:
1 1/2 Cups crushed cinnamon-sugar graham crackers (about 12 whole graham crackers) (Or you can use honey ones and sprinkle the crust with cinnamon and sugar)
4 Tbs. melted butter

Heat the oven to 350. In 9" pie plate, mix graham cracker crumbs and melted butter until butter is even distributed. Press it around the bottom and up the sides of the pie plate. Bake for 5 minutes and let cool completely.

Filling:
1 quart vanilla ice cream
1/3 Cup sugar
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmet
1 cup canned pumpkin
Assorted dried fruit, candy, chocolate chips (whatever you want to use to make the face)

Let the ice cream sit a room temperature for 15 minutes. Scoop it into a large mixing bowl. Break apart the ice cream with a spoon, then add sugar, spices, and pumpkin. Mash until the pumpkin and spices are evenly ditributed.

Spoon (or pour) the pumpkin ice cream into the cooled crust. Cover with plastic wrap. Freeze for several hours or overnight.

Before serving, decorate the pie to created a jack-o-lantern face. (The website people used figs, dried papaya, and dates. I used chocolate chips). Let the pie sit at room temperature for 10 minutes before slicing. Serves 8


Grasshopper pie: Use mint-chocolate chip ice cream (you don't need to add anything, just let the ice cream thaw for 15 minutes). Put into an oreo crust! If you want to make your own oreo crust, scrape off the frosting from the oreos, crush them, add the butter, and follow the same instructions as the graham cracker crust.

Need to save some time? You can use store-bought, pre-made oreo and graham cracker crusts!


2. Apple Bites
Quarter and core an apple, cut a wedge from the skin side of each quarter, then press slivered almonds in place for teeth. (I did them smaller than quarters, I just used an apple corer/slicer, and cut out the slices.)

Tip: If you're not going to serve them right awa, bast the apples with orange juice (lime and lemon juice works too) to keep them from browning!


3. Melon Brain
Use a vegetable peeler to remove entire green rind, exposing the inner white rind. (This didn't work for me. I used a paring knife, and cut off the rind).

Slife off the bottom of the melon to create a flat fase that will keep it from rolling. With a toothpick, outline squiggly furrows that resemble the folded surface of a brain.

Finally, carve narrow channels along the tracings with a sharp paring knife to expose the pink fruit beneath the rind (Kellen just used a spoon for the whole job, and it worked just fine).
