Brownies

1 1/3 cups flour
2 cups sugar
6 T. cocoa
1/2 cup milk
1/2 cup oil
1/2 t. salt
1/2 t. vanilla
4 eggs

Combine all ingredients. Bake at 350 for 25-30 minutes in a greased 9X13 pan. Frost with butter cream frosting

Butter Cream Frosting

1/2 cup softened butter. Add enough powdered sugar for spreading consistency. Add milk a little at a time if you need to thin it a bit. Add a couple of pinches of salt.

This is a good chewy brownie. It was nice to have homemade brownies instead of out of the box ones for a change. I made these for dad's work open house and sprinkled pecans on the top of them. They were gone in a flash. I got this recipe from Yvonne.

Chesenhauch--Almond Brownies

This is a new recipe I tried from Michelle Booth. It is a Danish recipe I think. If you like almond, you will really like this recipe. It is sort of like a brownie but is almond istead of choclate.

2 sticks butter melted
2 cups sugar
4 eggs
1/2 t. salt
1/4 t. cream of tartar
1 1/2 T. almond flavoring
2 cups flour.

Mix ingredients together. Sprinkle with sugar and cinnamon. Bake in a greased 9X13 pan at 350 for 30 minutes. I sprinkled toasted almonds on top. You could also mix them in the batter which I think would also be yummy. Happy cooking!!!

Calzones


Calzones Recipe

Here is the delicious calzone recipe (see pictures several posts ago!)! I got this recipe from my awesome friend Jamie Hansen! It's YUMMY!!! This recipe makes 2 18" Calzones (2 of the calzones in the picture! The 2 I made fed 5 people, including 2 missionaries, and there were left-overs!!!

Dough:
Mix 2 Cups warm water, 2 Tbs yeast, and 2 Tsp. Sugar (Yeast works best if you wait a few minutes until it is frothy). Add 4 tbs oil and 1 egg (beaten).

Combine:
1 tsp. Basil
1 tsp. garlic powder
1 tsp. oregano
2 tsp. salt
5 1/2 cups flour.

Mix all ingredients. Let rise 30 minutes. Divide dough in half, and roll out into 18" rectangles (see picture). Make small angled slits about 1 1/2" apart along the 2 long sides of the rectangle. (It makes more sense if you look at the picture!) Put filling inside, then braid the remaining dough over the filling! Bake at 400 degrees until golden brown, and cheese is melted.

Filling: Anything you want!!

Sauce (pizza sauce, bbq sauce, alfredo sauce, ranch, etc), onions, pepperoni, ham, pineapple, bacon, red/green peppers, olives, cheese (parmesean, mozarella, cheddar), BBQ chickn, red onion, etc! The sky is the limit!


I made a cheese and pepperoni one, and a ham and pineapple one! They turned out great! Hope the directions made sense!

A Few Recipes!!

I found these recipes on FamilyFun.com, and I made them for our little Halloween Dinner last night.



1: Pumpkin Ice-Cream Pie

Crust:
1 1/2 Cups crushed cinnamon-sugar graham crackers (about 12 whole graham crackers) (Or you can use honey ones and sprinkle the crust with cinnamon and sugar)
4 Tbs. melted butter

Heat the oven to 350. In 9" pie plate, mix graham cracker crumbs and melted butter until butter is even distributed. Press it around the bottom and up the sides of the pie plate. Bake for 5 minutes and let cool completely.

Filling:
1 quart vanilla ice cream
1/3 Cup sugar
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmet
1 cup canned pumpkin
Assorted dried fruit, candy, chocolate chips (whatever you want to use to make the face)

Let the ice cream sit a room temperature for 15 minutes. Scoop it into a large mixing bowl. Break apart the ice cream with a spoon, then add sugar, spices, and pumpkin. Mash until the pumpkin and spices are evenly ditributed.

Spoon (or pour) the pumpkin ice cream into the cooled crust. Cover with plastic wrap. Freeze for several hours or overnight.

Before serving, decorate the pie to created a jack-o-lantern face. (The website people used figs, dried papaya, and dates. I used chocolate chips). Let the pie sit at room temperature for 10 minutes before slicing. Serves 8


Grasshopper pie: Use mint-chocolate chip ice cream (you don't need to add anything, just let the ice cream thaw for 15 minutes). Put into an oreo crust! If you want to make your own oreo crust, scrape off the frosting from the oreos, crush them, add the butter, and follow the same instructions as the graham cracker crust.

Need to save some time? You can use store-bought, pre-made oreo and graham cracker crusts!


2. Apple Bites
Quarter and core an apple, cut a wedge from the skin side of each quarter, then press slivered almonds in place for teeth. (I did them smaller than quarters, I just used an apple corer/slicer, and cut out the slices.)

Tip: If you're not going to serve them right awa, bast the apples with orange juice (lime and lemon juice works too) to keep them from browning!


3. Melon Brain
Use a vegetable peeler to remove entire green rind, exposing the inner white rind. (This didn't work for me. I used a paring knife, and cut off the rind).

Slife off the bottom of the melon to create a flat fase that will keep it from rolling. With a toothpick, outline squiggly furrows that resemble the folded surface of a brain.

Finally, carve narrow channels along the tracings with a sharp paring knife to expose the pink fruit beneath the rind (Kellen just used a spoon for the whole job, and it worked just fine).
